The health values shown are those of the tier IV armors. The values can be found in-game via Vulcan's Forge. These are the optimal health values for the given speed values. Since steel armor has a greater health boost than the speed points it deducts it is used often in tandem with fabric armor to reduce the deduction. Using two pieces of iron armor instead would be sub-optimal. If an armor item does not have a material type next to it then continue the material before it. Fabric Bandana + Platebody + Iron Boots → Fabric Bandana + Fabric Platebody + Iron Boots.

I put up the graph so anyone could choose for themselves.But if you want to compare full fabric to full steel for example, full fabric provides 775 health at tier IV and 205 movement speed. Full steel provides 1325 health and 165 movement speed. As percentages, full fabric provides 24% more movement speed than full steel but has 41% less health.So, statistically, full steel provides more benefits in health than loss in speed. However, if movement speed is very important to you, I would say balance at least have some health boosting armor as well or include a boss amulet once you can equip one that suits you.

I'm glad you like it!To answer your question, the third column from the left is not necessarily the most optimal setup. It is quite balanced nonetheless.I formatted the axes so that maximum health and maximum movement speed are represented fairly equally.205 ÷ 210 ≈ 1325 ÷ 1400The ratios aren't exactly equal, but have nice clear integer values that are easy to read.As for how that specific set compares to others, Steel Helmet + Platebody + Fabric Boots provides 91% of the health and 104% of the movement speed Full Steel provides. In another comparison this set provides 156% of the health and 84% of the movement speed of Full Fabric.I'm no analyst either, but I'll let you figure out if my graph shows the optimal set. Cool chart, might test this out for NG+ since I just beat the regular game. As far as people wondering what the 'best' armor combo is, I'd like to point out that I was able to beat the last two bosses of the game on my first try (Tech Dungeon boss and Dimensional Pirate) wearing full T4 Fabric and a fully enchanted T4 spear.
I used 2 500 HP potions on the Tech boss and only 1 Hyper potion on the Pirate. However, I had to use all 5 250 HP potions and wear full Steel armor to beat the Desert boss (couldn't beat him in fabric or iron). So in my opinion, health is better than speed for the first 3 dungeons, but extra health becomes unnecessary once you can make T4 gear and potions (unless you're just really bad at dodging everything, then the extra health might help). I'd reccomend always keeping a full set of fabric to wear during the daytime when you run the shop, though. If you pair it with a fully enchanted broom, you should have no problem dealing with the thieves or birds. Yeah, I kinda stumbled upon that accidentally. I was wondering if there was any real advantage to stacking as much speed as possible, then I realized that speed is the only stat that is utilized when you're in town.
There wasn't a particularly good reason not to stack as much speed as possible, so I tried it out and found that the speed boost shaved about a second off the amount of time it took me to run from one end of the shop to the other. It doesn't seem like much, but there are enough unique instances where you have to step away briefly from the counter (restocking from the back room, attending to customers, catching thieves and birds) and it comes in handy for those cases.
